I love chicken fingers! Being able to dip those little pieces of battered chicken into some delicious dipping sauce is a lovely tasty treat. This past week I was craving these wonderful tasty bites so decided it was a great time to make them.
This recipe is so easy and quick so it is a great weeknight or even lunch time recipe. I just served it up with some veggies from my veggie platter, a jalapeno pepper and dipping sauce and it was plenty for a meal. You could even make it up ahead and pack it for your lunch the next day if you need to go to work. 🙂
Breaded and Baked Chicken
Serves 2
5 Smart Points per serving
1 large chicken breast
1/4 cup of flour
1/4 cup of cornmeal
1/4 cup of fat free Greek yogurt
1/8 cup of water (optional)
Spices as desired:
I used onion powder, garlic powder, celery salt, cayenne pepper, salt, pepper
Cut your chicken breast up into nugget sized pieces
Mix your flour, cornmeal and spices in a bowl and pour into a shallow plate
Mix your Greek yogurt with some water until it is the consistency of cream
Drop all your chicken nuggets into the yogurt mixture and mix until coated
Shake off excess yogurt from each piece of chicken and put on the plate with the flour mixture
Coat all the pieces of the chicken and let sit for a couple minutes
Preheat the oven to 425F
Prepare a shallow pan or pizza stone by spraying some oil on it or what I do is put a tsp of oil on the pan and use a small piece of paper towel to wipe it all around the pan so there is no oil residue floating on it.. just enough to coat. Add your chicken pieces to the pan.
NOTE: I love to use the pizza stone as the chicken comes out a bit nicer
Bake in the preheated oven 10 – 12 minutes. You do not need to flip them but I do flip them once at the 8-9 minute point. Do not overcook them or they will be dry. Remove from oven and serve with your favorite dip.
I love dips so I use a yogurt based dipping sauce that takes literally one minute to make and usually no points. (Just make sure to check your Weight Watchers app to see if something you are adding has points or create your own sauce)
Put 2 TBSP of Fat free Greek yogurt in a small bowl, add some sriracha sauce and spices or whatever you like.. I added 1/2 tsp of hot pepper jelly for my dipping sauce.. it was great for both the chicken and the veggies.
