By now you have figured out that I am a little hooked on these mug cakes. 🙂 They are so easy to make, versatile and turn out great every time! This Cranberry apple spice mug cake is no exception.  I love using the little one cup ramekins you can purchase at the dollar store.   They are just the right size and the mug cakes never seem to stick to them.

This time I used the Kodiak Protein Pancake Mix. It works wonderfully to add some bulk to your mug cake and the added protein that you would not get in a regular cake.  This whole cake with the vanilla yogurt was 5 WW Freestyle points for those of us using this program. 🙂

The topping really is the part that makes this mug cake so decadent. It adds that bit of sweetness to the dish that makes you go mmmmm and so simple! Just apples, cinnamon and maple syrup makes this absolutely delicious.

So the next time you are in the mood for something yummy without the guilt, I would eat this as a meal.. yes I have actually even eaten it as breakfast and not felt a bit of guild all morning. With 11 grams of protein it kept me satisfied until lunch!

Cranberry Apple Spice Mug Cake
1 Serving
3 WW Freestyle Points (without the yogurt- add points depending on the yogurt you use)

1 banana mashed
1 egg, beaten
1 TBSP cranberries (canned or fresh)
2 TBSP Kodiak mix
1 tsp vanilla
1 TBSP plain 0 fat Greek yogurt
1 tsp maple syrup
1 tsp pumpkin pie spice
1/2 tsp cinnamon
1/2 tsp baking powder

Topping
1/2 medium apple sliced thin
1 tsp maple syrup
1 tsp cinnamon

On the Side: Vanilla 0 fat Greek yogurt (Mine was 2 points)

Mix all ingredients for the mug cake in a large mug or ramekin.  Place in the microwave for 2 minutes, The middle will be quite soft still. If you want to add another 30 seconds, go ahead. Remove from microwave, loosen cake from edges and place on a plate. It is almost more like a custard consistency.

For the topping, place the thinly sliced apples, with the cinnamon and maple syrup in a bowl and microwave until the apples are soft. Approx. 2 minutes. Stir and pour over top of the cake. Add a dollop of the vanilla yogurt on top of the cake and then a bit on the side and enjoy!
