See what happens when September hits.. all of a sudden it is soup season. 🙂  So two days in a row now I have created my own soups.. this vegetable curry soup turned out so delicious I am thrilled to share it with you. (I actually remembered to write down the ingredients as I added them this time)

For those of us on the WW (formerly Weight Watchers) program, this recipe made approx 7 cups of soup for 2 points per serving.. and well worth it! The only points are actually in the white sauce part of the soup. Blending some of the vegetable mixture helped to give it that full bodied creamy feel.. and the butter didn’t hurt either. If you don’t want to add butter you will actually have an almost 0 point soup but believe me, you will miss out on that nice creamy taste. 🙂

2 cups broccoli diced
4 cups cauliflower diced
1/2 green pepper diced
1/2 medium onion sliced thinly
1 red pepper diced
1/2 cup finely chopped carrot
1/2 cup finely chopped celery
4 cups water
1 tsp minced garlic
1/2 tsp curry powder
1/8 tsp sriracha sauce
chicken bouillion cubes or powder.. (whatever is called for to make 4 cups of broth)
Onion Powder, garlic powder, celery salt, pepper and turmeric to taste

3 cups almond milk
2 TBSP butter
2 TBSP cornstarch

Chop all your vegetables, add water, spices and bouillion cubes to a large pot..cover,  bring to boil, then turn down heat and cook approx. 30 minutes or until all vegetables are cooked.
Take 3 heaping ladles (approx 1 1/2 cups) of the mixture when done and put into a blender and mix until fairly smooth. Return to pot (be very careful it will be HOT!)

While your vegetables are cooking, mix butter and cornstarch together and slowly add the almond milk to mix.. heat over medium high heat stirring until boiling.. let continue to boil another couple minutes at medium heat.. Pour into completed soup base mixture.. let heat on stove another 15 minutes stirring occasionally … now enjoy. .. delicious!

I would love to hear your feedback or if you added anything different!  You really can add any vegetables you want but this is what I had on hand at the time. 🙂 If you wanted added protein you could add some beans to it but I preferred not to do so.
