As mentioned in my last blog article this past weekend was about food the family BBQ for the hubby’s birthday. The first salad with the beets, butternut squash and carrots turned out great, but I wanted a leafy salad that was a bit different than the regular lettuce salad so once again turned to Pinterest and my salads board.
Now I have a view about any recipe.. that it makes a great guideline for creating your own new fun dishes. So i found this recipe for a Spinach salad with fruit, but it seems to me the fruit was the star this time. 🙂 Of course, I just can’t leave a recipe alone, and my thinking was that Goat cheese would be the best thing to add to this salad. The original called for Feta cheese which would probably be nice too, but i thought the creamy texture of the goat cheese would be a nice compliment to the fruit. I also added a bit more of the juice from the tangerine for the dressing.
Berry Good Spinach Salad
Weight Watchers 4 SP per serving
8 ServingsÂ
6 cups of baby spinach (I used just one regular sized plastic container for my recipe)
1/2 pint of Raspberries
1/2 pint of Blackberries
about 2 cups of tangerines cut in half (check for pits)
1/4 cup of walnuts
1/3 cup of Goat Cheese
Dressing
2 TBSP of tangerine juice
1.5 TBSP extra virgin olive oil
1 TBSP Balsamic Vinegar
1 TBSP honey
Add and gently mix all the fruit, nuts and goat cheese and baby spinach in a large bowl. Mix up your dressing in a separate bowl and store until ready to serve. Just before serving, mix and add the dressing to the salad.
